Jelly Filled Doughnuts

In a cupcake form & vegan.

Doesn’t get much better than that.

My friend sent me this recipe that she found, and I kind of hate her for that because I can not stop eating them. Kidding I love her <3

Anyways, these arereally, reallygood and they actually taste like doughnuts!

You need..

1 cup Dairy-Free Milk ( I used Almond)

1 tsp Apple Cider Vinegar

2 tbs Cornstarch

1 1/2 cup Flour (I used All-Purpose)

3/4 tsp Baking Powder

1/2 tsp Baking Soda

1/2 tsp Nutmeg

1/4 tsp Cinnamon

1/2 tsp Salt

1/3 cup Canola Oil

3/4 cup + 2 tbs Sugar

2 tsp Vanilla Extract

Jam/Jelly (I used grape jam which was delicious)

Powdered Sugar

1. Preheat oven to 350

2. In a small bowl, mix the MILK, VINEGAR, and CORNSTARCH and set aside

3. In a large bowl, mix all dry ingredients

4. The recipe says to now add the MILK mixture then the OIL, SUGAR, and VANILLA but my batter was super lumpy when I did that so I ended up mixing it for a while.. Maybe you should add the oil,vanilla, and the sugar first

5. Fill cupcake liners (this makes 12) equally. Then, take 1/2 (+/-) tbs of Jam and place it on top, in the center. It will sink into the cupcake. Bake for about 20min, check on them, then bake more if needed.

6. Let the cupcakes cool then dust with powdered sugar. Enjoy!
