Marshmallow-Stuffed Carob Crinkles
These are basically the same as the chocolate crinkle recipe (http://tinyurl.com/cl43m8q) except a few small changes
1. Use 1/2 cup +1 TBS chocolate and 1/2 cup + 1TBS carob chips (I use Sunspire Vegan Carob Chips)
2. After you form little ball shaped dough, press down a little ‘thumbprint’ with a small spoon, place a marshmallow, fold and roll into a ball again. You can find vegan marshmallows online or I buy mine at Whole Foods
Make sure the marshmallow is in the center and that you can not see it through the dough nor are any holes visible.. because vegan marshmallow melts.
These are 10 X more delicious than the crinkle cookies!
