Chocolate Crinkle Cookies

My house in Israel is only a short walk from this great bakery. I remember when I was younger I would always get either almond biscotti, linzer tarts, and chocolate crinkle cookies. Usually I opted for the chocolate crinkle cookies.. simply because I found them to be more appealing even though my favorite cookie is the linzer tart.

Anyways, I figured out I did not enjoy them as much when I was younger for I was not fond of chocolate with the exception of the super sugar, super fatty/unhealthy while chocolate spreadĀ  (

So i decided to make vegan chocolate crinkle cookies.

Enjoy :)

1/4 cup Earth Balance Butter (my favorite is the yellow one)

1 cup + 2 TBS Vegan Chocolate (I used Sunspire Vegan Chocolate Chips)

1/2 cup Sugar

2 TBS Bob’s Red Mill Egg-Replace + 6 TBS Water (3tbs water per tbs)

2 tsp Vanilla Extract

1 1/2 cups All-Purpose Flour

1/4 tsp Salt

1/2 tsp Baking Powder

Confection Sugar

1. Ina bowl, mix the FLOUR, SALT, and BAKING POWDER. Set aside

2. In a separate bowl over a pot filled with boiling water, place the BUTTER and CHOCOLATE. Stir constantly until you get an even mixture. Remove from heat (keep in bowl)

4. Add the egg mixture to the cooled chocolate until you get an even mix. Add flour mixture. It will form into sticky/hard dough

5. Wrap in nylon/aluminum foil and store in fridge for about an hour or two (you can store it over night)

6. Pre-heat oven to 325 F. Spray/grease an aluminum foil

7. Pinch off dough an roll into little balls (it depends on how large you want the cookies to be.. I made mine small which made 49 cookies) and roll in CONFECTION SUGAR

8. Bake for about 10minutes, or until the inside is not longer wet, until the cookies appear a tad dry on the outside or until bottom is starting to brown

9. I dusted mine with extra confection sugar but they’re good both ways

Amount varies; for me it was 49
